Getting back to the weekly menu

Taking the time to set a menu for the week, or even bi weekly, proves to be the best strategy for ensuring a healthy diet. Taking some time to re-research the dietary recommendations for myself and my son has been a great refresher. There were even weekly menu suggestions to help me get started. --link-- There are different ways to get the ball rolling, I needed to see what options others were taking to give myself a template to modify for our needs. Next, I looked into the levels of nutrition in fresh and frozen fruits and veggies. In my current situation, getting them fresh has been difficult. Then, if I had fresh, sometimes I would not get to use it before they went bad. I hope to be able to solve this problem soon, but in the mean time wanted to know if a good temporary solution could be getting frozen produce. In my research, it states often, frozen fruits and veggies are full of nutrition and are a great way to get what your body needs. --Link-- The process of freezing is called flash freezing ( --link-- ) and the fruits and veggies are put through this process at it's peek nutrition level. Which retains it until it's ready to be used. The next step after that, is to make sure the way you're cooking or using this frozen product is in a way that maintains the nutrients. Okay, so now I want to keep all this in mind as I create my menu. How much time I have to prepare these meals. Also, what kinds of meals are good on the go, or snacks, or what I will have to get if eating out. Monday, Tuesday, Wednesday, Thursday, Friday, and the weekend. For me, Sunday may be the best day to prepare the bulk of the food needed for the week. Then Wednesday is good for picking up the rest of the week. Once I get the hang of this, I think it will really turn out great. We will be eating healthy in no time. Will keep you up dated as I get this together. I hope it can help others too.

Healthy Foods I'd Like to Make

Sweet Beet Chocolate Tart

Ingredients:
Sweet Beet Chocolate Tart
Crust
1/2 cup almonds, ground to meal in food processor
1/2 cup pecans, ground to meal in food processor
1/4 cup ground flax seeds, ground
1 Tbs coconut oil
2 Tbs Agave or Honey
1/4 cup arrowroot starch (or potato if that’s what you have)
1 tsp Vanilla extract
1/4 cup water
Sweet Beet Chocolate Center
2 ½ cups grated beets
1/2 cup agave or honey
4 eggs
1/4 cup coconut or grapeseed oil
1/4 cup apple sauce
1 tablespoon vanilla extract
½ cup cocoa

Heat whole milk on stove top, added vanilla and cinnamon. As milk is warming, stir with a wooden spoon. When hot, start stirring in honey a spoon at a time (3 tbsp). Then drop in dried fruit and let sit for a couple of minutes. Stir as to prevent milk from coming to a boil. Lastly 1 cup of Oatmeal in to the pot. Stir again for a couple minutes than turn heat off and pour contents into a bowl. If you have banana, I'd slice and place on top. If it needs to be sweater, I'd add brown sugar. Also, walnuts are a good addition if available.

New Vegetarian - Working Hard

Wow!

It's been a while since I have gotten a chance to report my diet. Please forgive me.

For the past four days, I have mostly been eating pizza (when I got a chance to eat).




Being on the Job, I am trying to find a finger food, here are my attemts:







I guess I need to just stick with the fruits.

Hear are a bag of Plantain Chips.

In the mornings I have had banana, orange, and the Organic toaster pastry.

This morning I had 2 eggs and cheese, on wheat bread, from the corner Deli.

Okay,

I am going on 1year and 1month of being sick free.

My living situation and work situation has changed drasticly. I hope I can keep up my Health.

My diet is currently still off track, from what I am use to; but I hope to get back into some routine SOON.

I plan to have more details, links, better pictures, receipes, and other interesting vegetarian content up soon.

New Vegetarian - Eating What?

Yesterday, I started off with an Orange and shortly after a Banana.
I had a bowl of Cheereos with regular Milk.
Sweet Potato with some brown rice and black beans.

Today, some Potato Salad and
An Orange.

Yes, I am pretty hungry.

I can't wait to get settled.

I have some great recepies to try out.
